The Murtaler Steirerkäsesuppe is a very special specialty of the region!
Place the Vulkanland ham on a baking tray with baking paper, put it in the oven and place a second tray just above it. Let it crisp up at 180 °C convection oven (takes approx.15 minutes). Roughly dice Steirerkäse, onion and garlic. Sauté onion and garlic with olive oil, add beef broth. Add Steirerkas. Melt cheese over low heat, stirring constantly. Add crème fraîche and whipped cream and simmer on low heat for 15-20 minutes. Season to taste with salt, pepper, cumin and lime. Blend briefly with a hand blender. 7. Garnish with ham chips and cress.
