Currant pie

No sooner are the first currants in the garden, the currant cake for coffee can not be missed. Here is a recipe for a sweet dessert.

  2. Prepare dough - preheat oven 180 degrees

    • Whip 5 eggs to snow.
    • Butter, 200g sugar, egg yolks (of all 8 eggs), vanilla sugar, milk beat with mixer to a dough.

  3. Bake dough

    • Line baking tray with baking paper.
    • Spread the dough on the tray.
    • Push into the oven - bake there for about 40 min.

    Tip: Did you know that you can simply wet the baking paper under running water and then squeeze it out and lay out your shapes in wet form. So the baking paper adapts to shapes and you save the spreading with butter and dusting with flour.

  4. Prepare snow cover

    • Beat the egg whites of 3 eggs until stiff.
    • Add 200g granulated sugar
    • When the beaten snow is ready and the dough is almost ready in the oven, add the currant, washed and freed from the stalks, to the snow.

  5. Bake snow cover

    • Remove the cake from the oven.
    • While still hot, spread with the snow ribisel batter.
    • Put it back into the oven and bake for about 10 minutes.
