Murtaler Steirerkäse is a firm cooked cheese that was originally produced by many farms for their own consumption. The cheese is made from specially matured skimmed curd. Spices (caraway, salt, pepper), cooking salt and milk are added to the curd. This gives Murtaler Steirerkäse its typical hearty, spicy taste.
Some direct marketers refine it even more by adding butter and by folding in the "Bröselkäse" (the spiced curd). If you spot white dots (eyes), these are the pieces of crumbled cheese that have been lifted in by hand - a sign of genuine handicraft. This snack cheese is considered a rustic regional speciality and should not be missing from any Brettljause. Steirerkäse is especially recommended with a slice of wood-fired bread.
